- 1.25 cup rice flour
- 1.25 cup fine corn flour
- 1/2 actual teaspoon salt
- 1 actual tablespoon sugar
- 1 actual tablespoon baking powder (will try completely without next time)
- 400 ml plain fat-free yoghurt
- 1 actual tablespoon olive oil (+1)
- mix into dough, set aside
- some water onto oven pan (to keep paper still), cover with cooking paper, about 1 tablespoon of olive oil onto paper, fingerspread uniformly
- half of dough onto pan (aka get two 29x29cm pizzas out of this), wet hands, smooth dough out
- preheat oven to 190-200C, dough to bake for 10-15 min (do the second base now, store dough in fridge for a short time or in freezer for longer)
- turn oven higher (mine goes to 210), add toppings, bake for 10-15 min until cheese starts browning
Read the previous as: today was pizza day, been a while coming. Last time used regular wheat flour, this time switched to gluten free options as a test. Previous recipe called for 2 cups of flour, today 1+1 wasn't enough, so the list written above already includes the corrected amounts. It very much depends on the water-content of the specific yoghurt. I also got tired of taking out the measuring cups every time, so besides flour, switched to normal cutlery tea- and tablespoons. Was quite shocked when tasted the dough after mixing, though- tasted incredibly salty and bitter from the powder. That issue seems to have been solved by heat, however, the base tasted just fine and altogether amazing with the toppings added. Still can't really see the benefit of the baking powder being in there in the first place - am not making a fluffy cake, am making a dense pizza base. So next time will try to remember to try without. Another change from last time and for the next time is addition of olive oil. Today put a spoonful on the pan under the dough, next time will try adding some straight into it. Also switched to using higher temperature for the base - felt like it was more drying, less baking before, might be that my oven is a bit wonky, though. The covering of the day was ready-made arrabiata pasta sauce, leftover chicken-mushroom-paprika-xyzspices wok from yesterday, meltable-cheese (as opposed to non-melting, pizza, food, mixed or other magnificent cheese types our shop boasts of... doing food names right, Japan?). Next step - eat a panful of pizza for lunch and get knocked out for hours.
(I mean, if the day looks like: wake, breakfast, bee videos, honeycomb with tea, making pizza, making cornbread, pizza for lunch, bee videos, sleep, tea, getting dinner, eating dinner, bee videos, latenight snack, sleep, then can't really complain about the quality of life, huh? ;P )
(Disclaimer: did, of course, get a bunch of necessary stuff done in the meanhwhile too - like tape a gardening hose to a room dehumidifier that is stuffed into our wardrobe at the moment (in the middle of an epic mold-fighting saga here, unghhh), one end to outlet, the other to the intake grid... inventive multitasking for the win.)
